Our recent history has been shaped by a courageous choice—one we felt we could not avoid: to begin again by replanting our olive groves. There are no shortcuts when it comes to the quality of our oil. We oversee every stage of the production process directly: from pruning the trees to mechanical harvesting in early October, with the olives picked exclusively from the branches, followed by milling in our own olive mill just a few hours after harvest.
